Carrot Ginger Soup
Vegan
What you need
3 Carrots
1/2 thumb size Ginger
1/2 Acorn Squash
1 Apple
1 Onion
3 Cloves Garlic
Vegetable Stock
Salt & Pepper
Turmeric
Garlic Powder
Onion Powder
Olive Oil
Honey or Maple Syrup
Blender
Roasting tray
The Process
Cut Carrots, Onions, Ginger, Apple & Garlic
and place onto a roasting tray.
Cut Acorn Squash in half and place cut side down.
Sprinkle with olive oil, salt and pepper & turmeric (optional)
Roast until tender
When done roasting: Place all into a blender *be careful HOT*
Add vegetable stock & honey or maple syrup.
Blend until smooth.
And serve with crackers. So delicious.
