Broccoli Soup

What you need

1 Broccoli Head
2 Medium Potatoes
1/2 Onion
Vegetable Stock
Water
Salt & Pepper
Garlic Powder
Onion Powder
Nutritional Yeast
Roasted Red Pepper Hummus
Parmesan (optional)

Blender
Pot & lid


The Process

Wash & Cut 1 head of broccoli into pieces including the stem. Set aside the florets for later.
Peel & wash 2 to 3 potatoes. Cut into pieces.
Peel & Cut 1/2 Onion
Place cut pieces into a pot cover with water.
Season water with salt & pepper
You can also add vegetable stock to your water for more flavour.
Cook until tender
Then add the Broccoli florets 2-5 minutes

Place all into a blender *be careful HOT*
Add Hummus 1/2 a container (4 tbsp)
1/2 Cup of Nutritional Yeast (approx)
1 Tsp Garlic Powder
1 Tsp Onion Powder
(Parmesan is optional here)

When I did this I took out the florets and added to the top of my soup in the bowl. But you can also add them to the blender. Your choice. 

Blend until smooth
You may need to add more vegetable stock
Adjust it to your desired thickness
